  • 1 russet potato (almost 1 pound peeled, chopped into ½ inch pieces)
  • 1/2 red onion (small, diced, 1 cup)
  • 10 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarsely ground black pepper

    Pretty easy and super quick. We used half of a red onion and half of a white onion, added a ton of garlic, and added the spices according to our taste. We tossed a few carrot slices in too. The potatoes we still firm after 15 minutes so we added a little water which made a kind of gravy in the bottom
