- 1/2 cup carrots (julienne cut)

- 1 red onion (or medium yellow, diced small)
- vinaigrette dressing
- juice (medium lemon, about 2 tablespoons)
- 2 Tbsp. pomegranate balsamic vinegar (or other fruit flavored balsamic)

- 1 Tbsp. Dijon mustard
