- 1 1/2 cups bell peppers (colored, cut into thin strips, I used red, yellow, and green)
- 1/2 medium eggplant (peeled and diced)
- 1/2 large zucchini (peeled and diced)
- 1/2 cup sliced mushrooms
- 2 carrots (peeled and diced)
- 4 garlic cloves (minced)
- 6 lasagna noodles (ready to bake)
- 1 1/2 cups marinara sauce (homemade is best!)
- 2 cups fresh spinach
- 1 cup part skim ricotta cheese
- 1 Tbsp. fresh basil (chopped)
- 1 tsp. fresh rosemary (chopped)
- 2 tsp. fresh oregano (chopped)
- 1 tsp. salt
- 1 tsp. black pepper
- 1 egg (beaten)

This was absolutely delicious. We made our own marinara sauce with oregano, rosemary, thyme and red wine. The lasagna held its shape really well and it's some of the best lasagna I've ever had.

Awesome. I don't have an other word for it just awesome.
It's a lot of cutting but after that's done it all goes super fast, I made all done in the morning and let it stay in the refrigerator until it was time to cook. It's turned out really good my guest didn't even miss meat in it.
