- 4 Tbsp. olive oil
- 3 lb. fresh tomatoes (I used about 8 vine-ripened tomatoes, but you could use heirloom, plum, or any other kind of tomato you like)
- 1 red bell pepper
- 4 cloves garlic (peeled and roughly chopped)
- 1/2 yellow onion (diced)
- 4 Tbsp. fresh basil (chopped)
- 2 Tbsp. fresh oregano (chopped)
- 1 Tbsp. balsamic vinegar
- 1 cup water (as needed)
- salt
- pepper
- 1 pinch sugar (optional, to round out the flavor if your tomatoes aren’t sweet enough)
- 2 slices crusty bread (I used sourdough, but use what you like)
- 2 Tbsp. basil pesto (fresh, recipe here)
- 1 slice fresh mozzarella cheese
- 1 slice sharp cheddar cheese (or another cheese you like)
- 1 Tbsp. butter (for the bread and the pan)

The soup was disappointing, all I tasted was red pepper, and you would probably use less balsamic vinegar. The home make pesto had to much parmason. But the grilled cheeses were a wonderful idea!
