  • 200 grams jumbo shrimp
  • 1 onion
  • 200 grams monkfish
  • salt
  • ground black pepper
  • 15 ounces garbanzo beans
  • 2 tablespoons tomato sauce
  • fresh oregano

    Directions

    1. Add the oil to a skillet on medium heat. Add the shrimp peels and saute for 2 minutes. Remove the peels from the skillet.
    2. Add the onions and saute for up to 8 minutes.
    3. Add the fish, along with a pinch of salt and ground black pepper. Saute for 2 minutes.
    4. Add the garbanzo beans and cook for 5 minutes.
    5. Add tomato sauce and a sprinkling of oregano. Simmer for a few minutes and serve on rice.
