- 2 1/2 cups heavy cream (very cold)
- 3 Tablespoons dijon mustard
- 2 Tbsp. lobster base (Minors, available in seafood specialty stores)
- 1 Tbsp. olive oil
- 1/2 cup green onion
- 1 Tbsp. Tobiko (cooked grated lobster roe, Orange, can be substituted)
- 6 oz. lobster (diced cooked Maine)
- 1 lb. salted butter (cut in 1/2 inch chunks at 40 degrees)
- 1 cup lobster stock (very strong, or 1 Tablespoon Lobster base and 1 cup water)
- 6 dumplings (per person)
- 2 Tbsp. butter sauce
- 1/4 tsp. roe (grated, or Tobiko)
- 1 tsp. peeled tomato (finely diced)
- 1 Tbsp. fennel (blanched shaved, blanch in lobster stock and Pernod)
- 1 fennel (each, sprig)
