- 1/2 cup almond meal
- 1/2 cup potato flour (rice flour could also work)
- 1/2 cup coconut flour
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. canela
- 1 pinch salt
- 2 tsp. malt syrup (rice, or maple syrup)
- 1 whole egg (and 1 egg white)
- 1 1/2 cups buttermilk (I didn’t have any so just used the equivalent in normal milk, you could use almond to eliminate dairy and added a squeeze of lemon juice)
- 1/2 tsp. vanilla extract
- 1 1/2 Tbsp. melted butter (or coconut oil)
- 1 1/2 cups cooked quinoa
- coconut oil (or butter for cooking)
- 1/2 cup blueberries (optional)
