- 1/4 cup Sugar in the Raw (to finish)
- 4 Tbsp. unsalted butter (room temperature)
- 2 Tbsp. cream cheese (room temperature)
- 2 cups confectioner's sugar
- 1/4 tsp. lemon extract
- 1/2 lemon
- 1/2 lemon
- 1 pinch salt
- 1 Tbsp. lemon basil (finely chopped fresh, gives a lovely aromatic and fresh quality to the filling, optional)
- 1 pinch citric acid (this gives the filling a true tartness. It's available online or in baking supply stores, optional)
