- 1 Tbsp. olive oil
- 1/2 red onion (sliced into thin wedges)
- 6 sun dried tomatoes (chopped)
- 1 Tbsp. balsamic vinegar
- salt
- ground black pepper
- 2 Tbsp. fresh parsley (chopped)
- 1 Tbsp. fresh basil (chopped)
- 100 grams feta cheese (or goat cheese)

Directions
- Cook the pasta according to the instructions on the package, al dente.
- When the pasta is almost done, heat the olive oil in another saucepan. Add the onion and cook over low heat for 5 to 8 minutes until light golden brown.
- Add the tomatoes, balsamic vinegar, and the cooked pasta. Season with salt and pepper to taste. Remove from the stove and let it cool.
- Add the parsley, basil, and cheese. Mix carefully and serve.
