This pasta salad is full of flavor and is a filling meal for the family or the perfect addition to a potluck. Made with fusilli, chicken, ham, and flavored with lemon, this pasta salad is topped with croutons for a delightful crunch in each bite.

Ingredients

US|METRIC
  • 300 grams fusilli pasta
  • olive oil (to taste)
  • 1/2 onion (medium, or 1 small one)
  • 3 garlic cloves
  • 2 chicken breasts (small cubes)
  • salt (to taste)
  • 1/2 lemon juice
  • 4 slices ham
  • 1 1/2 cups croutons (homemade, optional)
  • black olives (to taste)

    Directions

    1. Cook fusilli pasta according to directions. When done, refresh under cold water. Place in a serving bowl.
    2. In the meanwhile, heat a smidgen of olive oil in a frying pan, add onion and garlic, and cook until onion is translucent.
    3. Add the chicken, and cook until well browned, adjusting the seasoning with a little bit of salt and lemon juice.
    4. Add some of the ham slices cut in chunks, and scatter with some croutons. Mix.
    5. To serve, garnish with remaining ham, croutons, and olives.
