- 2 Tbsp. sherry
- 2 Tbsp. soy sauce (white)
- 1 1/2 tsp. minced garlic
- 1 1/2 tsp. ginger (finely grated)
- 1 tsp. potato starch
- 1/2 tsp. sesame oil
- 1/2 tsp. black vinegar
- 1/2 cup egg whites (3 large eggs)
- 6 large eggs
- 2 Tbsp. water
- 1/4 tsp. sesame oil
- 1/4 tsp. kosher salt
- 1 1/2 tsp. canola oil
- 1/4 cup garlic chives (finely chopped, or scallions, green and pale green parts only)
- 3 pieces kombu (½ ounce)
- 1 1/2 cups dried bonito flakes
- 2 lb. sea scallops (—rinsed, muscles removed and reserved and each sliced horizontally into 3 thin rounds)
