- 1/8 cup champagne vinegar
- 1/4 cup orange juice (fresh-squeezed)
- 1/4 tsp. kosher salt
- 4 cups brown rice (cooked, I like short grain the best, room temperature or slightly warm, but not cold or super hot)
- 1 cup purple onion (diced)
- 1 1/2 cups dried cranberries (or fresh pomegranate arils, or a mixture of both)
- 1 cup toasted pecans (chopped, or crumbled in your hand if you're lazy like me)
- 4 Tbsp. flat leaf parsley (chopped, and maybe some mint, too, if you like mint in your food)

I love this recipe and have had 2 other friends ask me for it which is good testament.
I really encourage you to take the advice on the 'freshly squeezed' orange juice and it makes such a difference if you do.
Such a bonus too that it suits a beautiful vegan friend I have! :)
