This was an easy exceptional recipe! I used Paradise fruit and peel mix (purchased on line out of season) which is chopped small and perfect. Cookies were chewy and delicious. It is hard to stay out of them!
If you are missing the alcohol, you could always brush the cookie after baking with brandy or rum. I have two die hard fruitcake lovers who I satisfied with these as I ran out of time to bake and rest fruitcake
