- 8 oz. white mushrooms (thinly sliced or chopped)

Good, but not 100%. My quest for the perfect vegan quiche continues. The texture was a little crumbly and grainy (maybe switch from corn starch to tapioca starch, and increase the amount a little). The veggies were too salty for me, too.
