  • 3 1/2 ounces whitebait (fresh)
  • 1/4 cup all-purpose flour (seasoned)
  • vegetable oil (for shallow frying)
  • 1/3 cup mayonnaise
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon fresh chives (chopped)

    Directions

    1. Dredge whitebait in seasoned flour, shaking off any excess. Heat oil in a large deep frying pan over high heat. Working in batches, shallow fry whitebait for around 1 min, until golden. Remove with a slotted spoon and drain on paper towels.
    2. To make the mayonnaise, combine mayonnaise with lemon zest and herbs. Season to taste. Serve whitebait with herbed mayonnaise.
