- 6 king prawns (large green, peeled, tails and intestinal tracts removed, thickly sliced)
- 2 eggs (lightly whisked)
- 1 tsp. shrimp paste (diluted in 2 tbsp water)
- 2 cups jasmine rice (½ cup uncooked boiled, cold)
- 1 chicken breast (poached, shredded, see note)
- 40 grams fried shallots (see note)
- 90 grams pineapple (diced)
- 8 seeds (longans, peeled, halved and, removed)
- 4 snake beans (thinly sliced)
- 4 Tbsp. fish sauce (each, and lime juice)
- white sugar (To taste:)
- 2 green onions (thinly sliced diagonally)
