- 1 lb. shrimp
- 1/4 cup olive oil
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/3 cup honey
- 1/4 cup lime juice
- 1 Tbsp. soy sauce
- 1 tsp. garlic powder
- 1/4 tsp. chili powder
- 1/4 cup pineapple juice
- 1 cup shredded coconut

Directions
- Mix all ingredients except coconut in a bowl. This will be your marinade.
- Let shrimp marinade for 2-6 hours.
- Start frying the shrimp in a frying pan on medium heat. Only add enough shrimp to cover the base of the pan. No additional oil or cooking spray needed. As the shrimp starts frying, the juices and marinade will fill the pan. At this point sprinkle some coconut flakes on the shrimp.
