- 1 egg
- 1/2 cup buttermilk
- 2 green tomatoes (medium, sliced)
- 1/2 cup cornmeal
- 1/2 cup AP flour (divide in half)
- 1 tsp. seasoning salt (your favorite, Tony Chachere's or some such)
- vegetable oil (Enough, to fill your cast iron pan about 1/4 inch)
- 6 pieces cooked bacon (I can tell you how I do it, if you want. Baking sheet, 400' oven, 12 minutes)
- 1 cup arugula (or spinach or parsley or whatever leafy thing you have laying around)
- 4 1/2 inches whole wheat bread (slices of lightly toasted, hearty, NO sandwich bread. This SOB will rip right through it.)
- mayo (to taste)
