- 8 cups vegetable oil (for frying)
- 2 lb. flounder (boneless, cut into 1/2- to 3/4-inch slivers, 12- to 18-mm, no more than 4 inches, 10 cm in length)
- 4 large egg whites (whisked with 1/4 cup, 60 ml water)
- 1 cup masa harina
- 1/2 cup rice flour
- 1/4 cup cornstarch
- 1 tsp. baking powder
- kosher salt
- 1 Tbsp. chili powder (store-bought or homemade, plus more to finish)
- 2 limes (cut into wedges)
