- 3 beefsteak tomatoes (large, cored and cut crosswise into ¼-inch-thick slices, about 2 pounds)
- 1 medium shallot (cut lengthwise into ⅛-inch-thick slices)
- 1 cup mayonnaise
- 1/2 cup sweet chili sauce
- 2 Tbsp. finely chopped green onion
- 2 Tbsp. dill pickles (finely chopped)
- 1 1/2 Tbsp. creole mustard
- 4 cloves garlic (grated)
- 1/2 tsp. kosher salt
- 1/4 tsp. ground black pepper
