- 4 cups mixed vegetables (I used zucchinis, yellow squash, eggplants, tomatoes, bell pepper, red onion, cut into bite sized pieces – Feel free to use any fresh summer vegetables you want here!)
- 4 cloves garlic (minced)
- 1/4 cup olive oil
- 2 Tbsp. balsamic vinegar
- salt
- pepper
- 1 tsp. maple syrup (optional)
- 2 tsp. Herbes de Provence (or Italian Seasoning, optional)
- 1 lb. gnocchi (I bought my package from Trader Joe’s)
- 1 Tbsp. oil (I used avocado oil)
- 1 lb. gnocchi
