- 300 grams udon noodles (dried organic, I use Spiral brand)
- 6 cups vegetable stock (Chinese, recipe here)
- 1 Tbsp. ginger (julienned)
- 1 Tbsp. light soy sauce
- 1 tsp. white sugar
- 50 grams fresh shiitake mushrooms (stems discarded and caps finely sliced)
- 1 small carrot (peeled, julienned)
- 2 celery sticks (finely sliced on the diagonal)
- 90 grams snow peas (trimmed and finely sliced)
- 50 grams cloud ear fungus (fresh black, roughly chopped)
- 1 cup chinese cabbage (finely shredded)
- 1 tsp. sesame oil
- 1 cucumber (small, julienned)
- 1 cup bean sprouts
- 1/4 cup coriander leaves
- 1/4 cup mint leaves
- 1 red chilli (large, finely sliced on the diagonal)
