- 3 lb. peaches (peeled and sliced, about 4 large peaches)
- 1 cup sugar
- 1 Tbsp. cornstarch

- 1/8 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- 2 Tbsp. cream
- 1 Tbsp. demerara sugar
- crust (thin strips of tin foil to cover the outside, and prevent it from browning too much)
