- 2 large eggs
- 3/4 cup unsweetened applesauce
- 1/4 cup canola oil
- 1/2 tsp. almond extract
- 1/3 cup reduced fat sour cream
- 3/4 cup granulated sugar
- 6 figs (medium sized fresh black, stems removed and coarsely chopped)
- 1/3 cup sliced almonds (reserve a few to sprinkle on top before baking)
- 1 tsp. turbinado sugar (for sprinkling on top before baking, if desired)
