- 1 1/2 cups fresh cranberries (you could also use frozen cranberries but not dried)
- 1/2 cup brown sugar
- 1 tsp. orange zest (dried, or the zest of a fresh orange if you've got one handy)
- 9.5 oz. unbleached all purpose flour (weight, 2+¼ cups by volume)
- 3 tsp. baking powder (if you don't bake often, test if yours is fresh with Laura's tip)
- 1/2 tsp. salt (I use kosher)
- 7 oz. unsalted butter (cold, cut into pieces)
- 1/2 cup heavy cream

- coarse sugar
