  • 4 ears fresh corn
  • 1/2 cup diced red onion (finely, soaked in ice water for 20 minutes & patted dry)
  • 1/2 cup cucumber (seeded but not peeled, diced to same size as onions)
  • 1/2 cup sweet pepper (red or orange, diced to same size as onions)
  • 1/2 cup cherry tomatoes (halved or quatered)
  • 3 tablespoons parsley (finely torn)
  • 1 tablespoon basil leaves (or buds, pulled apart)
  • 1 tablespoon jalapeno (fresh, seeds and veins removed, very finely diced)
  • 1/2 teaspoon kosher salt (or sea)
  • 2 cups arugula leaves (small, I used a mesclun mix)
