- 2 qt. bone broth (beef, or stock)
- 1 cup white wine
- 1/4 cup dry sherry
- 2 Tbsp. demi glace (or one 1-ounce container, optional but recommended)
- 4 Tbsp. butter
- 2 Tbsp. extra virgin olive oil (EVOO)
- 4 onions (large or 6 medium, peeled, quartered and sliced)

- 1 tsp. ground white pepper
- 1 tsp. dried thyme (ground, or a small bundle of fresh thyme)
- 1 bay leaf (large)
- 1 tsp. sugar
- 1 baguette (sliced on small bias about ¾ inch thick)
- 4 Tbsp. softened butter
- 2 cloves garlic (halved)
- 4 cups shredded Gruyere cheese (1 pound)
- 1 1/2 cups grated Parmigiano Reggiano cheese (¼ pound)
