- 1 cup white vermouth
- 1 qt. beef stock (Lowest Sodium, or Bouillon)
- 2 Tbsp. brandy
- 1 tsp. sherry vinegar
- 4 artisan bread (1/2” thick slices of)
- 1/4 cup foie gras (B Grade, we used the trim from deveining the full liver – could substitute A grade)
- 6 oz. foie gras (3/4” to 1” thick slices of B grade, well chilled, could substitute A grade)
- 4 oz. Gruyere cheese (finely grated)
