- 6 yellow onions (halved and sliced ¼ inch thick, Do NOT use sweet onions)
- 4 Tbsp. butter (melted)
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. brown sugar
- 1/4 tsp. dried thyme (or 1 teaspoon minced fresh thyme)
- 2 1/2 Tbsp. cornstarch
- 2/3 cup apple butter (Do not add more than this or your soup may be too sweet)
- 3/4 cup dry sherry (or white wine, non-alcoholic cooking version works fine)
- 1/4 cup soy sauce
- 32 oz. low sodium chicken broth
- 32 oz. beef broth
- 1 loaf French baguette (cut into ½-inch slices)
- 2 1/2 cups Gruyere cheese (shredded, or mozzarella)
