- 3 lb. onions (* approx., about 5 or 6 medium onions)
- 2 Tbsp. light brown sugar
- 1 1/2 tsp. Worcestershire sauce
- 2 cloves garlic (minced)
- 1 Tbsp. butter (optional)
- 2 Tbsp. all-purpose flour (optional)
- 1 cup wine (sherry, marsala, or port are good choices, optional)
- 8 cups beef stock (chicken or vegetable stock can be substituted)
- 1 bunch fresh thyme
- 1 bay leaf
- 1 Tbsp. kosher salt (or to taste)
- 1/4 tsp. black pepper
- 16 slices French bread (crusty, toasted)
- 1 cup shredded Gruyere cheese
- 1 cup shredded mozzarella cheese

It was very good. I used Marsala wine . Made it just a little sweet, with the brown sugar. Next time, I’ll try port or half Marsala half red . Used ground thyme cuz I didn’t have fresh. Buy a good Gruyere that melts well. I bought Finlandia . A little chewy.
