- 4 yellow onions (large, thinly sliced)
- 1 tsp. salt
- 1/2 tsp. dry mustard
- thyme (to taste)
- 4 cups water
- 2 Tbsp. soy sauce (or coconut amino acids)
- black pepper (to taste)

Directions
- Add olive oil to a saucepan. Add onions and salt and cook for 10 minutes on medium heat. Stir occasionally. Add mustard and thyme and stir. Cover and cook slowly for half an hour or more. When the onions are soft, add the remainder of the ingredients: water, soy sauce or coconut amino acids and black pepper. Season to taste and simmer for 10 minutes or more. Serve with garbanzo beans.
