Description
Like a gooey bowl of French onion soup turned inside out, these deluxe grilled cheese sandwiches combines quick-caramelized onions and nutty Gruyere cheese for a comfort food mash-up you’ll be making on repeat. Serve the sandwiches with tomato soup and a dill pickle spear for a full meal with an extra side of nostalgia. The recipe is a Yummly original created by Ivy Manning.

- 1 large yellow onion
- 8 oz. Gruyere cheese (or Swiss cheese)
- 1 Tbsp. unsalted butter
- 1 Tbsp. extra-virgin olive oil
- 1 cup reduced-sodium chicken broth (or beef broth)
- 8 slices sandwich bread (white, whole-wheat, or multi-grain)
- 6 Tbsp. mayonnaise

Directions
- Slice onion in half through the root end and then thinly slice through the root end; this will make nice short pieces that won’t become stringy when cooked. Shred cheese (you should have 1 1/3 cups) and set aside.
- Heat butter and olive oil in a large frying pan over medium heat. When the butter has melted, add onion and cook, stirring occasionally with a rubber spatula, until onion starts to brown, about 6 minutes.
- Add about half of the broth and stir, scraping the bottom and sides of the pan to release browned bits. Then continue to cook, stirring frequently, until the onion is tender and browned all over, about 6 more minutes. Reduce heat if onion starts to scorch.
