Delicious! I used more like a cup of cheese, or more, but you wouldn’t need to. I also did the whole thing in a large, deep skillet on the stove with a lid, once the eggs and cheese went it. Just low heat. Always turns out great.

I mostly followed the recipe. The bread didn’t toast up as nice as I would have liked in the pan so I put in a pan in the oven to toast some more as the oven eated up. I dissolved 3 beef bouillon cubes with the balsamic vinegar to deglaze the pan. I didn’t have any beef stock or I would have used that. The onion tasted really great that way. I mixed the onions in with the eggs and grated Gouda over the top. I also grated some real Parmesan cheese in too. Also, I didn’t bake it in a cast iron pan but instead in a Corning pan. Turned out great!
