- 2 lb. sweet onions (small-medium yellow)
- 2 Tbsp. butter
- 1 glug extra-virgin olive oil
- 1 Tbsp. white flour
- 1 Tbsp. balsamic vinegar
- 1/2 cup dry vermouth (extra, or any dry white wine of your preference.)
- 1 sherry vinegar (generous splash of)
- 4 worcestershire sauce (generous dashes)
- 4 cups beef broth (sodium free* I like to use sodium free if store boughten.)
- 2 bay leafs
- 1 sprig thyme
- 1 tsp. kosher salt (or Salt de Fume to give an extra layer of flavor.)
- 6 black pepper (cranks of fresh)
