- 1 cup raw cashews (soaked for 2-8 hours, drained)
- 3 Tbsp. fresh lemon juice
- 2 Tbsp. apple cider vinegar
- 1/2 tsp. fleur de sel
- 6 Tbsp. water
- 3 tsp. Dijon mustard (I used 3 but I LOVE mustard)
- 1/2 cup puy lentils (picked through and rinsed)
- 1 1/2 lb. red skinned potatoes (mini, washed and steamed)
- 2 Tbsp. apple cider vinegar
- 1/4 tsp. fleur de sel
- 2 carrots (peeled and shaved with a vegetable peeler- cut the shaves into thin strips)
- 1/2 lb. asparagus (trimmed and cut on the bias into medium pieces)
- 7 radishes (medium, washed well, trimmed and sliced thin)
- 1/3 cup fresh basil leaves (packed, cut into thin ribbons)
- 1/3 cup fresh parsley leaves (packed, chopped roughly)
- 1 1/2 Tbsp. shallot (minced fresh)
- 1/4 tsp. fleur de sel
- 1/4 tsp. cracked black pepper (+ more to season after the salad has rested for 1 hour)
