Light and refreshing. Great alternative to a standard carrot salad. Best to allow it to marinate for a few hours or overnight.

It wasn’t bad! I had to double the recipe to have enough to cover the pound of carrots though. While good, I still felt the flavor was missing something sharp. 🤷♀️

Light and fresh salad that was a very easy side to make! Great for summer BBQ's! I'll definitely make it again possibly adding other vegetables!
