Turned out amazing. I used the Pillsbury frozen pie crust - very light and I used unsweetened coconut and one cup sugar as one mentioned for less sweetness. I’ll probably use less sugar then that the next time..definitely making this again♥️♥️

I ended up making my own pie crust using whole wheat pastry flour & ground old fashioned oats. I did not precook the crust. The pie turned out wonderful. A little bit too sweet so next time I will add less sugar

I made it into mini-pies using a cupcake mold. I didn’t have any unsweetened coconut on hand, so I used sweetened coconut and reduced the sugar to 3/4 cups. The pie was delicious—it reminded me of a pecan pie without the pecans. If I repeat this, next time, I’ll cut the sugar to 1/2 cup.

Easy preparation, but way too sweet for us. Will try again with maybe 1/3 the amount of sugar. Can see why people love it.

so easy to make and makes my home smell amazing. I used unsweetened coconut flakes to cut down on sugar. Serving with fresh blueberries and raspberries and french roast coffee. amazing recipe
