- 1 sweet potato (medium to large, 10-12 ounces)
- 1 Tbsp. maple syrup
- 1 Tbsp. almond milk (if needed; see instructions)
- 1 cup peanut butter (or any nut butter)
- 1 tsp. pure vanilla extract
- 1/4 cup flour (I used all purpose, but any will work)
- 1/4 cup cocoa powder
- 2/3 cup coconut sugar (or any granulated sugar)
- 1 1/2 tsp. baking soda
- 1/8 tsp. salt
- 2/3 cup mini chocolate chips (separated, for vegan option, try Enjoy Life)
- 24 muffin (count mini, tin or silicone, I think it would be very difficult to make the recipe without this! Or use an 8×8 square tin)
