- 1 white onion (diced)
- 3 cloves garlic (minced)
- 1 lb. chicken (cooked and shredded)
- 1/3 cup zucchini (shredded and excess water squeezed out)
- 1 1/2 cups enchilada sauce (use this sauce for AIP/nightshade-free)
- 8 grain free tortillas (I use Siete almond flour tortillas, see notes for AIP)
- 1 cup dairy-free cheese (shredded, optional, use something like this for AIP)
- 1 avocado (sliced)
- 2 Tbsp. cilantro (chopped)
- 2 Tbsp. green onion (chopped)
- 1/4 cup black olives (sliced)
- 1 lime (quartered)
