Excellent base recipe, and great for a quick, portable meal for us not-so-into-morning people! Easily adaptable to whatever kind of burrito you like, or ingredients you have on hand. They freeze well, defrost and reheat better than store brands, and have the bonus of being customizable to fit your life.
The only real criticism I have is related to proportions of the different fillings. Followed this recipe to the letter the first time I made it, and ended up using 16 tortillas rather than the 12 recommended. I also found that I had WAY more scrambled eggs than I needed and not enough of the veggie/sausage filling. Doing 10 large eggs (with other ingredients the same as written) ended up working better for me the second time I made this. I also spread a teaspoon of salsa on the tortilla before adding the other ingredients, which prevents things from getting soggy during assembly, and allows me to continue being lazy in the morning. (win-win)

Perfect recipe for those who are always on the go. I've made it a couple times now, once I skipped he cheese and it was still delicious.
