- 500 grams lamb shoulder (cubed)
- 1 red onion (peeled and roughly sliced)
- 1 red pepper (de seeded and roughly chopped)
- 2 garlic cloves (peeled and finely chopped)
- 1 inch ginger (piece of, peeled and finely chopped)
- 1 Tbsp. ground coriander
- 1 Tbsp. ground cumin
- 1 Tbsp. turmeric
- 1/2 tsp. cayenne pepper
- 1/2 tsp. chilli flakes
- 3 red chilli (dried)
- 3 cloves
- 6 green cardamom pods (cracked and seeds removed, just use a back of a knife to crush the pods on a chopping board remove the seeds and discard the shells)
- 1 Tbsp. Garam Masala (option, recipe here)
- 1/2 Tbsp. cumin seeds
- 500 mL lamb stock
- 1 sweet potato (large, peeled and cubed)
- chopped coriander (to serve)
- oil (for frying, I like groundnut)
