- 4 cms fresh ginger (peeled and roughly sliced)
- 5 garlic cloves
- 1 Tbsp. groundnut (/olive oil)
- 2 kaffir lime leaves
- 1 liter boiling water (or 500ml if using fresh chicken stock)
- 1 chicken stock cube (/500ml of fresh chicken stock)
- 1 Tbsp. fish sauce
- 1 tsp. caster sugar
- 10 small tomatoes (halved)
- 60 grams sugar snaps
- 4 handfuls fresh spinach
- 1/2 lime
- 200 grams fresh salmon (thinly sliced)
- 150 grams rice noodles
- shallot (fried, from above)
- 1 handful fresh coriander
- 2 spring onions (sliced at an angle)
- 2 red chillies (finely sliced, optional)
