- 3 oz. medjool dates (chopped)

- 1 eggplant (large, or 2 small. Peel skin and chop into 1 inch squares)
- 14.5 oz. fire roasted tomatoes (can of Muir Glen)
- 32 floz chicken stock (low sodium)
- 1/2 lemon
- fresh cilantro (or flat leaf parsley if you’re not a cilantro fan!)
