Used Neufchâtel cheese instead of cream cheese and birch xylitol .
Made 5 pancakes
Recipe says 4 servings so I would think that means 1 pancake is a serving?

These turned out well. Were hard to flip and keep their shape but I noticed the second round I cooked did better — maybe letting the batter sit for 5 minutes before pouring into the griddle would help? Also, I’d use a little less salt next time.

Not too bad! I ended up having to add milk to thin out the batter because it was a bit too think for my liking. I know that took away the “Keto” part of it

Delicious! My go-to recipe for pancakes now. A wee bit dry compared to a normal pancake, but if you smother it in melted butter and syrup no one’s going to notice.

Awesome not grainy at all. I did separate the eggs and beat the egg whites to soft peaks and folded that in at the end. I also added 2 Tablespoons of heavy weight whipping cream
