- 2 medium carrots (peeled and coarsely cut up)
- 2 stalks celery (coarsely cut up)
- 3 inches fresh turmeric (piece of, peeled and coarsely cut up)
- 1 lemon
- 2 whole black peppercorns
- 2 tsp. kosher salt
- oz. cold water (to cover)
- shiitake mushroom caps (Sliced, removed from 8-ounce package, stems used in stock)
- 1 1/2 cups onion (diced)
- 1 Tbsp. fresh turmeric (finely grated)
- 1 lemon (3 tablespoons)
- 4 cups green cabbage (chopped)
- 5 cups Tuscan kale (chopped, leaves only)
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 1 pinch cayenne pepper
