- 1/2 cup natural peanut butter
- 1/3 cup dark brown sugar (firmly packed, do not skip on the amount! this is already a low amount of sugar, and i've tried with less and they don't taste right. note: light brown sugar works, but cookies won’t be as brown.)
- 1 large egg (room temperature)
- 3/4 tsp. pure vanilla extract
- 1 Tbsp. tapioca starch (or cornstarch, or regular all-purpose flour)
- 3/4 tsp. baking soda
- 1/4 tsp. table salt (+ extra flaky salt for sprinkling on top)
- 1/2 cup chocolate chips
- 1/4 cup unsweetened shredded coconut
- 3 Tbsp. finely chopped pecans
- 1/4 cup corn chex (finely crushed, or similar cereal)
- 2 Tbsp. cacao nibs (if you don’t have these, add 2 more tablespoons of chopped nuts)
