    Love this cake! Not too sweet & gluten free! I used 1 3/4 cup of Bob's Red Mill almond flour instead of grinding almonds to make the flour. I added 1/2 tsp. of allspice to the batter. I beat the egg whites for about a minute, which worked just fine. In addition, I toasted & chopped some almonds for garnish. (One important note: make sure to gease springform pan & parchment paper thoroughly, as this batter is quite sticky from the honey.) Since it's made with pure, natural ingredients, I served this for breakfast, topped with Greek yogurt & cinnamon. (I left out topping the cake with honey because the cake was sweet enough as is.) My husband loved it! Will definitely make this again. 👍

    It turned out perfect! The flavor is light, the cake is definitely firm- I took mine out after 22 min and it was maybe alittle too done. But even still- it tastes wonderful and light. Definitely drizzle honey on top otherwise it could taste a little bland. I’ll make this again for sure! Actually I take it back! After the cake cools the flavor somehow comes through even more, so although it’s a light flavor it’s not bland by any means. I love it!!

    I thought it turned out great and my guests were none the wiser that this was flour free. I did not grind my almonds too fine, I baked at 325 in the top third of the oven and cooked about 4 minutes longer the recipe recommends and it came out a deep golden color that was uniform throughout. I do think a hint of cinnamon and nutmeg would be a nice addition as well as trying it with maple syrup.
