- 1/2 cup almond butter (creamy, no-stir )
- 4 Tbsp. honey (agave or maple syrup may be substituted)
- 2 tsp. vanilla extract
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 1 pinch salt (optional and to taste)
- 1 cup blueberries (I used frozen; if using frozen add them to batter frozen and don't thaw)

Very impressed! I didn’t have the mini muffin pans, so I made them in regular size muffin cups filling half way and cooked the same amount of time. I am a muffin fanatic! So I am looking for ways to enjoy without all the flour and excess (regular) sugar. This recipe is definitely a keeper!

These blueberry muffins were great! I just started eating paleo and thought I was never going to eat bread AGAIN. These satisfied me.

Amazing!
I used frozen mixed berries (avoiding any huge strawberries etc...) it was great! Perfect go to for e weekend morning after my workout.

I'm surprised how good these turned out. They taste almost like regular muffins, just a tad bit more nutty bc of the almond butter. I used regular almond butter rather than the no stir type. Fresh blueberries were a little tart, but I liked it. Next time I will add dark chocolate :)
