Description
These yummy muffins are loaded with fiber and have only 1.5 net carbs per muffin. You can use any kind of milk dairy for the liquid. My most recent batch was half almond milk, half heavy cream and they were super good.
Ingredients

- 2 cups ground flax seed
- 5 large eggs
- 1/2 tsp. baking soda
- 2 tsp. baking powder
- 1 Tbsp. vanilla extract
- 2 Tbsp. stevia (or to taste)
- 2 Tbsp. ground cinnamon
- 1/4 tsp. salt
- 1/2 cup almond milk (adjust to proper consistency)

Directions
- Beat eggs
- Add remaining ingredients and mix well.
- Grease muffin tin and fill each tin mostly full. Should fill 12 tins
- Bake at 350 degrees for approximately 20 minutes or until they feel firm and springy to the touch

I added 1/4 cup shredded coconut and 1/4 cup ground walnuts to mine along with 2tbl coconut oil. I also added 1 Tbl honey, which adds carbs but made it more flavorful.

I make these on a regular basis. They're filling and leave me feeling light and not carb overloaded like a regular muffin would
