Delicious! Omitted the cilantro and added chopped green onion instead. Used Daiya dairy-free shreds and added garlic powder, cumin, and chili powder in addition to a bit more enchilada sauce. Will definitely make again!

We enjoyed it! I couldn't believe how easy it was to make the home enchilada sauce- worth it!!Will definately cook again and make extra to stick in the freezer for another day.

Turned out great! I used quinoa instead of brown rice. Made some extra sauce to put on top when it came out of oven. Tasted very similar to an enchilada. Will definitely make this again.

We liked it, but it probably does need homemade enchilada sauce. I added some extras like chopped bell pepper, minced garlic and sliced olives. Tapatio sauce was a nice addition over the top. Next time I’ll add it to the casserole itself. I will make it again with a few tweaks.

Turned out great! I’ll add a pepper next time to give it a little more flavor, but still very tasty.

I added green and red peppers and onions. I felt it needed a little extra sauce.

It was easy to make and was great for a weekday meal. but it was on the bland side. next time will add own spices to give more flavor.

I added chili powder, garlic, onions, jalapeños, peppers and diced tomatoes with green chilies. Turned out very good.

Tasted very good, especially for a healthy dish. I added some more ingredients for flavor including paprika,cumin,black pepper,cayenne,oregano,garlic, onion powder, green peppers, and a can of chili tomatoes I will definitely make again this dish again.

This dish was very easy to make and turned out great! I did make a few changes to the original recipe. I added ~1 tbs paprika, half of a red onion: diced, and excluded beans. It made quite a large serving and I’m looking forward to delicious leftovers.
